Banana Jam

Makes 1 1/2 cups


Ingredients



4 ripe or slightly overripe bananas, diced

 

1/2 cup sugar

 

1/2 tsp vanilla

 

juice of 1 small lime





Preparation



In a large microwave safe bowl (ceramic or pyrex glass), toss lime juice with diced bananas.  Microwave on HIGH for 1 minute.


Carefully remove bowl.  Drain any water from bananas.  Microwave bananas on HIGH until about 1 cup of liquid remains.


Add sugar to bananas.  Microwave in two 1 minute intervals until thickened.  Stir after each minute.  


Cool mixture to room temperature.  Store in a clean, dry jar with a lid.  Keep refrigerated.
