Onion Jam

Makes 1 1/2 cups


Ingredients



3 cups yellow onion, diced

2 tsp kosher salt

1 TB vegetable oil

1/4 cup light brown sugar

1/2 tsp paprika or smoked paprika

1/2 tsp white wine vinegar






Preparation



Add onions and salt to a shallow, microwave safe bowl or pie plate.  Stir.  Cover bowl with a lid or pie plate.  Microwave 6 minutes on HIGH or until onions are soft and tender.  Drain any excess water.

Stir vegetable oil and sugar into the onions.  Microwave on HIGH 4 minutes.  Stir in paprika.  Microwave on HIGH 1 minute.

Stir white wine vinegar into jam.  Allow jam to cool.  Store in an airtight container in the refrigerator for up to a week.
