Strawberry Jam

Makes 1 1/2 to 2 cups
Ingredients
1 1/2 pounds frozen strawberries, thawed
1 cup granulated sugar
2 tsp cornstarch
Preparation
Purée strawberries in a blender or food processor. Add to a large microwave safe bowl. Microwave on HIGH 1 minute. Stir in 1/2 cup sugar. Microwave on HIGH for 2 minutes. Watch to make sure jam doesn’t boil over.
Add cornstarch to a small bowl. Gradually stir 2 TB of hot jam into cornstarch until smooth.
Stir in the remainder of the sugar and cornstarch mixture. Microwave on HIGH 2 minutes.
To check the jam’s thickness: make a line through jam on the back of a wooden spoon. The line will remain for a set jam. Continue to microwave on HIGH in 2 minute intervals for a thicker jam.
Cool bowl on a wire rack for 10 minutes. Spoon or ladle jam into a jar. Close jar with a lid. Keep refrigerated.
