Crab, Corn & Arugula Open Face Omelet

Makes 1 open face omelet
Ingredients
1/4 cup corn, fresh or frozen (thawed)
1 cup fresh arugula or other greens
1/3 cup sliced imitation crab
2 tsp vegetable oil
2 scallions, sliced
2 large eggs, lightly beaten
salt and pepper to taste
Preparation
In a six inch wide and 2 inch deep microwave safe bowl, combine corn and arugula. Microwave on HIGH for 1 minute to wilt arugula.
Carefully remove bowl from microwave. Add imitation crab, scallions and oil. Salt and pepper to taste. Microwave on HIGH for 1 minute until mixture is heated through.
Carefully remove bowl from microwave. Add eggs to bowl. Stir well. Cover bowl and microwave on HIGH in 1 minute intervals or until eggs are set.
Serve with bread, rice or salad greens for lunch or dinner.
