Lemon Herb Spaghetti

Makes 1 or 2 servings
Ingredients
4 oz. dry spaghetti, linguine or capellini
2 minced garlic cloves
1 TB unsalted butter
1/2 tsp lemon zest
2 TB lemon juice
1 TB minced parsley
1 TB finely chopped sliced almonds
2 TB grated parmesan cheese, plus more for serving
salt and red pepper flakes to taste
Preparation
Prepare spaghetti according to package directions. Reserve 1/2 cup pasta water.
Add garlic, butter, lemon zest and lemon juice to a microwave safe bowl. Microwave on HIGH 1 minute.
Stir sauce and salt to taste. Toss with pasta. If pasta is too dry for your taste, add reserved pasta water in small amounts to your satisfaction. Be careful not to dilute the lemon butter's flavor.
Add parsley, almonds and parmesan to pasta. Toss to combine.
Serve with red pepper flakes and additional parmesan.
