Sweet & Spicy Tofu

Serves 1 to 2 as a main course
Ingredients
For the tofu:
1 extra firm tofu block
1 scallion, thinly sliced
1/2 small onion, sliced
1 tsp garlic powder
1 tsp onion powder
1 tsp chili powder
1 tsp salt
1 tsp sugar
2 tsp paprika
1 TB vegetable oil
For the sauce:
3 TB soy sauce
2 TB brown sugar
1 tsp. white wine vinegar
1/4 tsp. red pepper flakes
1/3 c water + 1/2 TB cornstarch
Preparation
Make the sauce:
In a small bowl, stir together water and cornstarch.
In another bowl, whisk together soy sauce, oil and sugar until combined and sugar is dissolved.
Microwave soy sauce mixture for 30 seconds on HIGH. Carefully remove from microwave and add cornstarch slurry. Stir to combine.
Return bowl to microwave. Microwave on HIGH in 30 second intervals until sauce thickens.
Carefully remove from microwave and add red pepper flakes. Set aside to cool.
Make the tofu:
Drain tofu thoroughly and pat dry. Cut into medium sized cubes and add to large bowl.
Combine the spices, sugar and salt in a small bowl. Add seasoning to tofu cubes and gently toss to coat. Gently toss and coat tofu with vegetable oil. Set aside for at least twenty minutes.
Oil a microwave safe plate or flat bottomed pan. Add half of seasoned tofu to plate. Spread in one layer.
Microwave tofu on HIGH for 3 minutes. Carefully remove from microwave and flip cubes with a spoon or spatula. Return to microwave and cook on HIGH for another 3 minutes.
Remove cooked tofu to serving bowl or plate. Repeat process with the remaining seasoned tofu and onion slices.
Serve tofu with the sauce and rice or noodles. Or eat as a snack. Garnish with sliced scallions.
