Cheddar & Seed Biscuits

Makes 7 biscuits
Ingredients
1 cup all purpose flour
1 tsp baking powder
1/4 tsp paprika
1/4 tsp salt
2 tsp sugar
3 TB unsalted butter, cold and diced small
3 TB sour cream
1 TB vegetable oil
1 TB cold water
1/4 cup extra sharp cheddar cheese, diced
1/2 TB Everything Bagel Seasoning
2 tsp butter, softened
Preparation
In a large bowl, whisk together flour and baking powder. Cut the butter into the flour. Make a well in the bottom of the bowl.
Combine sour cream, paprika, salt, sugar, oil and water in a bowl. Mix well. Stir in cheese. Add mixture to the well in the flour bowl. Stir together. Dough will be dry.
Turn dough out on a board or plate. Knead dough (used my hands) until it can hold together in a ball. Pat dough into a 1 inch thick circle. Cut out biscuits with a 2 inch dough cutter. Gather dough scraps and cut out biscuits to make 7 biscuits in total.
Place biscuits in a 6 inch microwave safe pan. Spread 2 tsp of softened butter on biscuit tops. Cover biscuit tops with Everything Bagel Seasoning.
Microwave biscuits at 80% power for 1 minute and 45 seconds. Biscuits should rise and feel firm.
Cool biscuits in pan on a wire rack. If using a plastic pan, remove biscuits after 5 minutes to cool on rack to prevent moisture from collecting on bottoms.
