Composed Tuna & Vegetable Salad




Is this a recipe? or a strategy?  It's a strategy.  And a guideline.


When it's hot, you're tired or you're hot and tired, a salad that's a mix of fresh vegetables and pantry items is a solution.


A composed salad can be anything you like and have on hand.  It doesn't have to be elaborate but should have enough elements to be interesting.


Then there's the dressing (which isn't in this photograph).  That, too, is your choice.  Creamy or light.  Sweet or tart.  Or somehow all four.  My favorite is a homemade honey mustard dressing.  It's sweet, tart, light and creamy.


A few seasonal vegetables in the fridge (maybe some frozen corn) and inexpensive pantry staples like canned beans and fish is what it takes to have a satisfying lunch or dinner.
