Garlic Herb Potatoes

Garlic Herb Potatoes recipe highlights what microwave ovens do exceptionally well... steaming. Steaming petite yellow potatoes retain their sweet flavor as opposed to boiling it away.

You can find these supposed "gourmet" potatoes next to larger potatoes in the produce aisle. It's clever marketing; I suspect these are apart of an early harvest of larger yellow potatoes or tiny spuds of a later harvest.

I haven't tried, but I'm sure halved or quartered small new potatoes are acceptable substitutes.

Makes 2 to 4 side dish servings

Ingredients

1 lb petite yellow potatoes, all lightly pricked with a small paring knife or fork

1 TB minced garlic

1 TB soy sauce

1 TB unsalted butter

2 thinly sliced scallions, green part only

1/4 cup chopped fresh parsley

salt and pepper to taste

Preparation

Add butter and garlic to soy sauce. Microwave on HIGH for 30 seconds. Set aside.

Add potatoes in one layer to a minimum 3 inch deep medium to large casserole dish. Add water to just cover the bottom of the dish; do not submerge potatoes in water. Cover with lid or plate. Microwave on HIGH 10 minutes or until potatoes are fork tender.

Add scallions and parsley. Microwave on HIGH 1 minute 30 seconds. Drain any excess water.

Toss potatoes with sauce. Salt and pepper to taste. Cover potatoes for at least 5 minutes to absorb sauce.
