Orange, Spinach & Feta Salad
Cara Cara navel oranges were used in this recipe. They're pink fleshed and slightly sweeter than common navel oranges.

Orange, Spinach & Feta Salad

Serves 1 as a main course salad
Ingredients
For the salad:
2 small navel oranges, peel and pith removed and sliced into rounds
1 cup fresh spinach
1 TB crumbled feta
1 TB chopped pistachios
1 scallion, thinly sliced
For the dressing:
2 TB fresh orange juice
1 tsp extra virgin olive oil
1/2 tsp honey
1/2 tsp Dijon mustard
salt and pepper to taste
Preparation
Make the dressing:
In a small bowl: whisk orange juice, honey and Dijon mustard together. Whisk in olive oil. Salt and pepper to taste. Set aside.
Assemble the salad:
On a large plate, arrange spinach. Lay orange slices on spinach. Scatter green onions, feta and pistachios on top.
Add dressing and serve.
