Of course Carrot & Cheese Balls are superb spread on crackers for snacking.
Skip forming them into balls and use it as a delicious sandwich spread.
Either way they're easy to make. And kind of fancy.

Carrot & Cheese Balls

Makes 8 cheese balls
Ingredients
4 ounces cold cream cheese
1 cup finely grated Swiss cheese
1/2 cup finely grated carrot
1 scallion (green stem only), minced
1/2 tsp smoked paprika
1/4 tsp fine salt
2 TB coarsely chopped sliced almonds (optional)
Preparation
In a medium bowl, combine cream cheese, Swiss cheese, scallions, paprika, salt and carrot. Blend with a wooden spoon (or any large spoon).
Add almonds to a small bowl. Measure mixture using a level tablespoon. Moisten hands. Form mixture into 8 balls. Roll each ball in sliced almonds.
Store in an airtight container (preferably a wide flat bottomed container). Place parchment paper in between balls if you must layer the cheese balls in the container. Refrigerate up to 2 days. Remove from refrigerator 5 to 10 minutes before serving.
