Chocolate & Nut Banana Bites

I'll admit it. Making Chocolate & Nut Banana Bites was messier than I conceived in my head. But the result was worth it.

As I ate the last of the frozen bites, I realized something. The nuts and the melted chocolate could've been combined. Thus skipping a step. I'll consider this in the future. And making this recipe is in the future as long as bananas ripen at light speed.

There's no guarantee of photogenic banana bites with a single dipping of a nuts/chocolate mixture. Chocolatier tools may lessen the process's messiness. I can't guarantee that either.

I'll stand by Chocolate & Nut Banana Bites deliciousness and impressive good looks. Despite the messy fingers.

Makes 16 to 18 pieces, depending on the banana size

Ingredients

2 ripe bananas, cut into 1 inch slices

1/3 cup semi sweet chocolate chips

1 TB almond milk or water

1/4 cup sweetened shredded coconut, finely chopped

1/4 cup dry roasted peanuts, chopped

1/4 cup honey roasted peanuts, chopped

Preparation

Combine coconut and dry roasted peanuts in a small bowl.

Place honey roasted peanuts in a separate small bowl.

Melt chocolate chips with almond milk, dairy milk or water in small, microwave safe bowl on HIGH for 15 to 20 seconds.

Stir until smooth. Set aside to cool.

Dip a half of the banana slices in the cooled, melted chocolate. Roll the chocolate covered slices in the coconut-peanut mixture.

Place coated banana slices on parchment lined plate or sheet pan.

Repeat the process with the honey roasted peanuts.

Freeze coated pieces for at least 20 minutes before serving.

Store chocolate nut covered banana pieces in the freezer.
