Puffed Rice Balls

Makes 20 puffed rice balls
Ingredients
3 cups puffed rice
1/2 cup sweetened coconut
2 TB sesame seeds
1/2 cup peanut butter
5 TB granulated sugar
2 TB cocoa powder
1/4 cup warm brewed coffee or water
Preparation
Combine peanut butter, sugar and cocoa in a microwave safe bowl. Mix well. Stir in water or coffee until mixture is smooth.
Microwave on HIGH 30 seconds. Carefully remove from microwave. Stir. Microwave on HIGH 30 seconds. Carefully remove from microwave.
Stir coconut, sesame seeds and puffed rice into peanut butter mixture. Allow mixture to cool 5 minutes before forming into balls.
Roll puffed rice mixture into TB size balls. Chill 10 minutes before serving.
Store in an airtight container in the refrigerator.
