Creamy Mushroom, Spinach & Squash Soup

Makes 1 serving
Ingredients
2 cups sliced white button mushrooms
1 tsp vegetable oil
1/2 small yellow onion, chopped
1 cup fresh or frozen spinach, chopped
2 garlic cloves, minced
1 cup ALDI Specialty Selected Pumpkin and Butternut Squash Pasta Sauce
1/2 water, chicken or vegetable broth
salt and pepper to taste
extra virgin olive oil, optional
Preparation
In a microwave safe bowl, microwave mushrooms on HIGH 2 minutes, covered. Drain and reserve any liquid from the mushrooms.
Add oil to mushrooms and salt to taste. Microwave on HIGH for 30 seconds. Set aside.
In a separate microwave safe bowl, add onion and garlic. Microwave on HIGH 2 minutes, covered. Add chopped spinach. Microwave on HIGH 1 minute or until spinach and onions are tender.
Microwave pasta sauce, reserved mushroom liquid and choice of broth in a microwave safe bowl on HIGH for 1 minute.
Carefully remove bowl from microwave. Add the cooked ingredients and stir. Salt and pepper to taste. Microwave on HIGH 1 minute.
Carefully remove bowl from microwave.
Drizzle soup with extra virgin olive oil, if desired. Serve immediately.
