Sweet Potato, Mushroom & Spinach Soup



Sweet Potato, Mushroom and Spinach Soup is a light yet flavorful lunch or dinner.  It also makes use of peak fall vegetables.


Using vegetable broth is fine if you don't have mushroom broth.  But hear me out.  I made the mushroom broth from the liquid of the cooked mushrooms and the mushroom stems. 


I composted mushroom stems until I discovered how much flavor I was tossing aside.  Just add water to the mushrooms stems and microwave on HIGH for one minute.


The red miso paste isn't essential.  Don't have it?  Don't worry about it.  It is worth seeking out as it is a superb flavor booster.  I get mine at an international foods market.
