Sweet Potato & Red Miso Soup

Makes 1 serving
Ingredients
1/3 cup mashed sweet potatoes*
1 TB red miso paste
2 TB scallions, sliced (optional)
1 1/2 cup of chicken broth, vegetable broth or water
salt and pepper to taste
Preparation
If mashed sweet potatoes are cold, warm them in the microwave on HIGH for 30 seconds.
Stir sweet potatoes and broth or water together in a medium microwave safe bowl. Microwave on HIGH for 1 minute.
Carefully remove bowl from the microwave and stir. Add the red miso paste and stir until miso dissolves. Microwave on HIGH for 1 minute or until hot.
Carefully remove bowl from the microwave and stir. Season with salt and pepper to taste.
Garnish with green onions, if desired. Serve immediately.
