Tofu, Mushroom & Spinach Soup

Makes 1 serving
Ingredients
1 1/2 cups fresh or frozen spinach, chopped
1/4 cup fresh mushrooms, sliced
2 tsp vegetable oil
2 scallions, sliced
2 oz. extra firm tofu, cubed
1 TB white miso
1 1/2 cups water
salt and pepper to taste
Preparation
In a large microwave safe bowl, add spinach and mushrooms. Cover bowl and microwave for 1 minute, or until spinach wilts.
Carefully remove bowl, add scallions, oil and miso paste. Stir and return to microwave to cook on HIGH for 1 minute.
Carefully remove bowl and stir in water and tofu. Return to microwave to cook on HIGH for 1 minute or until soup is hot.
Carefully remove bowl and serve. Garnish with scallions and/or hot sauce, if desired.
