Tofu, Mushroom & Spinach Soup

Makes 1 serving
Ingredients
1 1/2 cups fresh or frozen spinach, chopped
1/4 cup fresh mushrooms, sliced
2 tsp vegetable oil
2 scallions, sliced
2 oz extra firm tofu, cut into 1 inch cubes
1 TB white miso
1 1/2 cups water
salt and pepper to taste
Preparation
Add spinach and mushrooms to a large microwave safe bowl. Cover bowl. Microwave for 1 minute, or until spinach wilts.
Add scallions, oil and miso paste. Stir. Microwave on HIGH for 1 minute.
Stir in water and tofu. Microwave on HIGH for 1 minute or until soup is hot.
Garnish with scallions and/or hot sauce, if desired. Serve immediately.
