Almond Orange Currant Fudge
I wanted to use up the last bit of egg-free orange curd in the jar. So I made this simple fudge.
Sweetened condensed milk and a teaspoon of orange zest may be an adequate substitute for the orange curd.

Almond Orange Currant Fudge

Makes about 24 pieces
Ingredients
1 cup semi sweet chocolate chips
2 TB eggless orange curd
1/4 cup crushed sliced almonds
1/4 cup currants
2 to 3 tsp whiskey (optional) or 1 tsp vanilla extract
Preparation
Line a 7 x 5 x 2 inch rectangular or 8 inch square pan with parchment paper.
Microwave orange curd in small microwave safe bowl on HIGH 30 seconds. Stir and set aside.
In a separate bowl, add chocolate chips. Microwave on HIGH in 30 second intervals or until chips begin to melt.
Stir orange curd into chocolate chips until smooth. Mix in almonds, currants, whiskey or vanilla extract.
Press fudge evenly into prepared pan with moistened hands or a spatula.
Refrigerate until firm. Cut fudge into squares.
Keep fudge refrigerated in an airtight container.
