Chocolate Orange Coconut Candy

It took a while for me to try orange with chocolate. I was skeptical. How could such contrasting flavors taste delicious?

Several recipes combine orange and chocolate. And I started to feel betrayed by my assumptions.

So I eased into the orange chocolate combo with a simple (and relatively inexpensive) candy recipe. Rather than an elaborate tart or cake.

I used cream of coconut as a mediator between the chocolate and orange. I've never had a problem with chocolate/coconut or orange/coconut.

I love chocolate-coconut-orange.

Okay. Now I know why there are so many orange and chocolate recipes. Chocolate and orange is a refined flavor combination and not as obvious as chocolate and coconut.

That said... I wouldn't pass out Chocolate Orange Coconut Candy on Halloween.

Chocolate Orange Coconut Candy

Makes 24 pieces

Ingredients

1 (141 g) 5 oz box cream of coconut*

3 TB orange juice

1/4 cup light brown sugar

1/2 cup dark chocolate chips, melted

1/2 cup semi sweet chocolate chips, melted

1/2 tsp whiskey

2-3 TB crushed sliced almonds (optional)

Preparation

Line a 7 x 5 x 2 in pan with parchment paper.

Add cream of coconut to a microwave safe bowl. Microwave on HIGH for 30 seconds. Carefully remove bowl from microwave.

Stir sugar and orange juice into cream of coconut. Pour into a parchment lined container. Refrigerate uncovered until firm.

Place 1/2 cup chocolate in a microwave safe bowl. Microwave on HIGH 30 seconds at a time until chocolate chips are soft. Add the remaining chocolate chips and whiskey. Stir until smooth.

Spread melted chocolate over firm coconut candy. Cover chocolate layer with almonds, if using. Refrigerate candy for at least 4 hours or until solid.**

Cut candy into squares. Keep refrigerated in an airtight container.

* Cream of coconut is a solid block of coconut pulp available at international grocery stores.

**I refrigerated the candy for 24 hours before cutting to make sure it was completely solid.
