Lemon Drop Cookies

Makes 12 cookies
Ingredients
5 TB unsalted butter, softened
1/2 tsp lemon zest, finely grated
1 TB lemon juice
1/8 tsp salt
1/4 cup + 3 TB powdered sugar
3/4 cup all purpose flour
Preparation
Combine flour and 1/4 cup powdered sugar in small bowl.
In a large bowl, beat butter, lemon zest, salt and lemon juice together. Mix in powdered sugar and flour until a dough forms.
Use a tablespoon to scoop dough and shape into balls. Place 6 balls in a circle along the outer edge of parchment paper or microwave safe plate.
Microwave on HIGH 45 seconds. Carefully remove cookies from microwave. Cool cookies on rack for 5 minutes. Repeat with the other 6 balls of cookie dough.
Roll cookies in remaining powdered sugar and cool completely.
Store cookies in an airtight container.
