Lemon Drop Cookies

Makes 12 cookies
Ingredients
5 TB unsalted butter, softened
1/2 tsp finely grated lemon zest
1 TB lemon juice
1/8 tsp salt
1/4 cup + 3 TB powdered sugar
3/4 cup all purpose flour
Preparation
Whisk flour and 1/4 cup powdered sugar together in small bowl.
In a large bowl: beat butter, lemon zest, salt and lemon juice together. Stir in powdered sugar and flour until a dough forms.
Form 1 TB of dough into balls. Place 6 balls in a circle along the edge of parchment paper or a microwave safe plate. Microwave on HIGH 45 seconds.
Cool cookies on a wire rack for 5 minutes. Roll cookies in remaining powdered sugar while warm. Roll cookies additional powdered sugar when cooled completely, if desired.
Repeat with the other 6 balls of cookie dough.
Store cookies in an airtight container.
