Orange Chocolate Chip Cookies

Makes 12 to 18 cookies
Ingredients
1 cup all purpose flour
1/4 tsp baking soda
1/2 tsp baking powder
3 TB mini semi sweet chocolate chips
1/3 cup sugar
1/8 tsp salt
1/4 tsp almond extract
2 TB butter, softened
1 TB vegetable oil
1/4 sour cream
1/2 tsp orange zest
Preparation
In a large bowl, whisk together flour, baking powder and baking soda.
In a separate large bowl, beat sour cream, butter/oil spread and zest together until blended.
Whisk in the sugar, salt and almond extract into the sour cream/butter mixture.
Make a well into the bottom of the bowl with the flour mixture. Add the oil mixture to the flour. Stir with a wooden spoon or a rubber spatula until just combined and no flour is visible. Do not over mix. Fold in chocolate chips. Dough will be soft.
Divide the dough in half and roll or pat into two 1/4 inch circles. Cover with plastic wrap or parchment paper. Refrigerate for at least 1 hour.
Cut out cookies from dough using a 1 1/2 inch cookie cutter.* Arrange 6 cookies in a circle (do not place any in the center) along the edge of parchment or microwave safe plate.
Microwave on HIGH for 45 seconds. Carefully remove from microwave and cool on a rack.
Repeat with second batch.
Store in an airtight container.

* Scraps of dough can be gathered, rolled and cut into more cookies.
