Peanut Butter Dark Chocolate Chunk Cookies

Makes 16 cookies
Ingredients
1 cup all purpose flour
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 tsp vanilla extract
1/4 cup peanut butter
6 TB unsalted butter, softened
1/3 cup packed light brown sugar
1/3 cup dark chocolate chunks
Preparation
In a large bowl, whisk together flour, baking powder and baking soda.
In a separate large bowl: beat the sugar, salt, butter and peanut butter until combined. Stir in vanilla.
Make a well into the bottom of the bowl with the flour. Add the wet mixture to the flour. Stir in flour. Gently fold in dark chocolate chunks.
Refrigerate for at least 15 minutes.
Roll a TB of cookie dough into a ball. Press ball into a 1/4 inch thick circle. Arrange 6 cookies in a circle (do not place any in the center) along the edge of parchment or microwave safe plate. Microwave on HIGH for 45 seconds to 1 minute.
Cool cookies on a wire rack. Carefully handle hot cookies; they are fragile.
Repeat with remaining cookie dough.
Store in an airtight container.
