I never contemplated making meringues in a microwave. I didn't think it was possible.
Then I stumbled across a microwave baking book from the 1980s. Not only is it possible to make meringues in the microwave, it's easy.
It's not only easy; it's quick. Especially when compared to hours in a conventional oven.
Serve meringues with your choice of sauces: curd, melted chocolate or a fruit sauce. Or whipped cream and fruit.
Meringues

Makes 16 to 18 meringues
Ingredients
1 egg white
2 cups powdered sugar
Preparation
Beat egg white lightly. Stir in powdered sugar, a small amount at a time, until pliable dough forms.
Form the dough into a thin, 1/2 inch thick log. Cut into small pieces. Flatten pieces slightly.
Place three pieces on a microwave safe plate lined with parchment paper. Microwave on HIGH for 45 seconds until dry. Meringues triple in size.
Carefully remove meringues to a cooling rack.
Repeat with the rest of the meringue pieces.
Store meringues in an airtight container.
