Mini Onion & Feta Cheese Quiches

Makes 4 mini quiches
Ingredients
1/2 cup onion jam
2 large eggs, lightly beaten
2 to 3 TB sour cream
2 to 3 TB crumbled plain or herb feta cheese
black pepper to taste
Preparation
Oil four 1/2 cup size ramekins or microwave safe cups.
Whisk eggs, sour cream, salt and black pepper to taste together in a bowl. Stir in onion jam.
Add 1/4 cup filling to each ramekin or cup. Top with feta cheese. Microwave on HIGH 2 to 3 minutes. Run a thin knife or a paring knife around ramekin/cup edges to easily remove quiches. Alternatively, serve quiches in ramekins.
Cool quiches on a wire rack. Serve at room temperature. Store in a covered container in the refrigerator. Reheat quiches for 20 seconds on HIGH.
